Keto Breakfast Bowl Recipe

No pasta, no potatoes. That’s a keto rule you cannot break.

Yet what is a breakfast bowl without hash browns..?

So you might already know, that you can substitute cauliflower for potatoes if you want, but what we are looking for is options. Shredding cauliflower and then forming it into hash browns would certainly work for this dish, but we are going to use radishes.

No one ever uses radishes, but they actually cook up great with a TON of flavor! What we are going to do here is work with layers. That’s right… layer after decadent layer!

Start with the radishes and build from there… throw the egg on top however you want to cook it!

You could go radish layer > sausage layer > cheese layer > egg or … switch it up!

If you like, you could sub the radish out for broccoli, but I really like the flavor you get out of a radish… it’s almost like a potato/onion hybrid. Your first impulse is to sub them out, but I’m telling you, give them a try!

Also, sense this is a breakfast bowl, cook everything in the same skillet, it will blend the flavors together and make everything delicious!

Keto Breakfast Bowl

Simple easy keto breakfast bowl for busy mornings.

Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 7 ounces / 200 grams radishes
  • 3.5 ounces /100 grams ground sausages
  • 1/4 cup Shredded Cheddar Cheese
  • 1 large egg
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook sausage in a medium high heat until fully cooked through.
  2. Remove sausage from pan and set aside leaving grease in the pan.

  4. Cup up radishes into bite sized pieces and add to the pan. Season with salt and pepper.
  5. Cook until radishes become tender to bite or easily pierced with a fork. It should take 8-12 minutes.
  6. In the meantime fry up an egg to your preference and set aside. We like ours over easy so the yolk can spill into all the layers!
  7. Once radishes are fully cooked with sausage, cheese and egg. The warm layers should melt the cheese.
  8. Serve warm and enjoy!
