Egg, Bacon and Avocado Salad Bowl (Keto, Paleo, Whole30)

There are few recipes that make low-carb diet more appetizing and this one is one of them.

This kind of simplistic recipes are my favorite, nothing complex and extremely healthy. This recipe is a great one for low carb and high fat diets like the keto diet also works well for diabetic diet too.

I have been following a keto diet for many years now, and can vouch for its efficacy with my positive experiences. As you can not eat whole lot of carbs on keto, any recipe that re-creates American comfort food is golden in my book.

This recipe checks all the boxes, it’s simply our egg salad but made the keto way.

To make it a full meal, wrap it with lettuce, or make a sandwich with keto bread.

P.S. You can also enjoy this salad with fatty dressings like keto ranch dressing.

Ready to make this chunky avocado salad, made with simple ingredients and requires no effort and practically no cooking skills. Easy, nutritious, and delicious … ticks all the boxes.

Serves: 1 Prep: 5 Mins Cook: 5 Mins

What you’ll need:

  • 2 bacon medallions
  • 2 hardboiled eggs, chopped
  • 1/2 large avocado, chopped
  • 1 tbsp red onion, finely chopped
  • sea salt and ground pepper, to taste

What you need to do:

  • Fry the bacon until crispy in a non-stick pan, let it cool slightly and chop.
  • Combine the bacon, eggs, and avocado with onion and bell pepper in a bowl.
  • Season with salt and pepper to serve.
  • Serve with keto bread or fill it in a lettuce wrap

NOTE: Optional dressing – Greek yogurt/Heavy Cream, Mayonnaise or Keto ranch dressing.

Additional Tips:

This Avocado, eggs and bacon bowl takes your classing egg salad and adds good-for-you avocado for a delicious low carb recipe. Here are a few tips for making this delicious salad:

  • In this particular recipe we have not added any dressing, to keep it light and simple but you can add mayo, ranch dressing, etc just keep in mind that you dressing must not be high in carbs/sugar so it will defeat the purpose of being a keto recipe
  • You can also add 1 tsp of ACV or lemon juice
  • Don’t overly mash the avocado. When you stir everything together, try to keep things a chunky. Otherwise it will resemble more like guacamole than a salad.
  • Avocado turn brown quickly so remember to add them at the last minute.

Can you make it and store…

This egg, avocado, bacon bowl is best made fresh, but you can keep it in the fridge for up to two days in an air-tight container. After two days the avocados will start turning brown.
